Broccoli and Cheese Soup

Ingredients:
1/2 C butter
1/2 C flour
4 C half and half
4 C chicken broth
1/2-full medium chopped onion
3-5 heads chopped broccoli
3 grated carrots
16 ounces grated cheddar cheese
salt and pepper

Preparation:
Cook butter and flour using a whisk over medium heat for 3-5 minutes. Stir constantly and add the half & half and chicken broth. Simmer for 20 minutes. Saute onion in butter. Add the broccoli, carrots, and onions to soup. Cook on low heat for 20-25 minutes. Add salt, pepper, and cheese.
