Squash/Zucchini Casserole

Ingredients:
4 or 5 summer squash or zucchini
small onion
2 tsp pimento
1 large carrot
1 can cream of chicken soup
1 cup sour cream
1 box stuffing mix (like Stove Top)
1 stick of butter-optional

Preparation:
Cook squash/zucchini until soft, but not mushy.  Drain most of water, leave about 3/4 cup in the pan with squash/zucchini.  Add chopped onion, pimento, grated carrot, cream of chicken soup, sour cream, and 3/4 of the stuffing mix (can mix butter in the the stuffing mix first).  Mix all together and put in casserole pan.  Sprinkle rest of stuffing on top.  Cook for 30-45 minutes until golden on top.
