Ingredients:
1 lb ground beef
2 tbsp taco seasoning (either store bought or homemade: 1 tsp ground cumin, 1 tsp black pepper, 2 tsp ground oregano, 2 tsp onion powder, 2 tsp garlic powder, 1/2 tsp coriander)
1/2 chopped onion
1 small can diced green chiles (or 1 poblano pepper, roasted and skin removed)
1 15 oz can black beans, drained and rinsed
1 1/2 cups salsa
4 cups broken tortilla chips
1 cup shredded cheddar and Monterrey Jack cheese
Preparation:
In a large skillet brown meat and drain grease. Add onions, chiles, and seasoning and cook over medium heat for 5 minutes. Stir beans and salsa into meat mixture. Gently stir in broken tortilla chips and sprinkle cheese on top. Cover and cook on low heat for 5 minutes.
Serve with taco toppings like sour cream, chopped avocados, tomatoes, black olives, etc...
