Ingredients:
1 1/2 c. wheat flour
3/4 c. oat/wheat bran
1 c. brown sugar or honey
2 tsp. baking soda
1 tsp. baking powder
1/2 tsp. salt
2 tsp. cinnamon
1 1/2 c. carrots shredded
2 apples shredded
1 c. nuts chopped (pecans, almonds)
3/4 c. almond milk
3/4 c. ground flax seed
2 eggs, beaten
1 tsp vanilla
Preparation:
Mix dry ingredients, stir in carrots, apples, raisins and nuts. Combine milk, honey, eggs beaten, flax and vanilla, Put in muffin cups. Bake 350 degrees for 15-20 min. Makes 24.
